Place a large saucepan on the stovetop over high heat. Heavily season the water with sea salt flakes and bring to a boil.
Once the water is boiling, add the pasta of your choice and give it a quick mix. Cook it one minute less than what it states on the package instructions.
Place a large pan onto your stovetop over high heat. While still cold, add 1 tablespoon of unsalted butter and olive oil. Mix to melt the butter. Once melted, add the minced garlic and saute for 30 seconds, while continuously stirring to prevent it from burning.
Mix in the chicken stock and allow it to boil. Next, add the cream, sea salt flakes, and ground black pepper. Stir to combine. Bring it to a boil. Once boiling, reduce the heat to low and gently simmer the sauce for 6 to 7 minutes, stirring occasionally.
Add the washed baby spinach and mix until wilted.
Using a slotted spoon, transfer the cooked pasta to the sauce. Reserve a small amount of pasta water just in case you prefer a thinner sauce.
Add the grated cheese and mix well. Let it simmer for 1 1/2 minutes. Give it a stir after every 30 seconds or so. Make a taste test and adjust the seasonings if needed.
Keep stirring. If you want to thin the sauce down, add the reserved pasta water.
Transfer to a bowl and top with grated cheese, parsley, black pepper, and olive oil.
