To make this Mexican street corn, you need corn, butter, mayo, cotija cheese, and chili powder. In other recipes, they add sour cream instead of butter or use both. You can serve it with lime wedges and freshly chopped cilantro for garnish. Pair this Mexican-style street corn with burgers, anything BBQ, burritos, tacos, quesadillas, refried beans, or rice. Fill a large pot with water and let it come to a boil. Once boiling, add corn, place the lid, and cook for 5 minutes. Once done, remove from the pot and set aside until cool enough to touch.
Insert a skewer in the middle of each ear of corn.
Brush each corn with melted butter.
Spread some mayonnaise all over each ear of corn using a spatula.
Add the cotija cheese to a large bowl. Scoop it out and sprinkle it over the corn. Make sure to cover all the sides.
Sprinkle a bit of chili powder evenly across the corn. Adjust the amount depending on your preference. Serve and enjoy!
