Step 1
Cut the salmon fillets into small bite-sized pieces, then put them in a bowl, and season them with salt and paprika making sure to toss well until evenly coated.
Step 2
Wrap each salmon piece with bacon, then place them on a baking sheet, and preheat a skillet over medium heat.
Step 3
Grease the skillet with nonstick cooking spray, then place the salmon bites seam-side down, and cook them for about 8 to 10 minutes.
Step 4
Flip them over, then lower the heat to medium-low, and continue to cook the other side for another 8 to 10 minutes or just until cooked through and the bacon is nicely browned.
Step 5
Transfer them to a serving dish, then in a blender, add the green onions, lemon zest, and lemon juice, and pulse them quickly until smooth and combined.
Step 6
Serve the salmon bites with the prepared dipping sauce on the side. Enjoy!
