I’ve tried many corn casserole recipes before, but none of them has ever impressed me the way this version by Cooking Up Love did. This is one of the best corn casseroles I’ve ever had and I couldn’t even believe that this was so easy to make and uses only a boxed corn muffin mix which makes it even better!

Unlike other versions, this one is less dense, and it’s light, fluffy, and creamy that it’s almost similar to a corn pudding souffle. I bet you won’t even be able to stop eating it once you start because it’s so good, I highly recommend that you give this a try. Step 1
Preheat your oven to 350°F, then melt the butter, and set it aside to cool. Whisk the eggs in a large mixing bowl, then add the salt and pepper, and pour in the melted butter.
Step 2
Next, add in the corn kernels, cream corn, and sour cream, then finally, add the Jiffy Muffin Mix, and mix everything together until fully combined.
Step 3
Coat a 9×9-inch baking dish with a generous amount of butter, then transfer the mixture, and spread it evenly. Place it in the preheated oven to bake for about 45 minutes.
Step 4
Once the center is slightly jiggly and puffed and the top is golden brown, then your corn casserole is done cooking. Serve and enjoy!
