Start by preheating the oven to 350F and lightly greasing two baking sheets with non-stick cooking spray or lining it with parchment paper.
In a large mixing bowl, add butter, brown sugar, and white sugar. Mix using a hand mixer for about 2 minutes until smooth and creamy. Next, add the eggs and vanilla. Beat until well incorporated and smooth.
Add baking soda, salt, and flour. Mix until a dough forms. Using a spoon, stir in chocolate chips and coconut.
Scoop two tablespoons of the dough and roll it into a dough ball using your hands. Place on the prepared baking sheet. Make 12 cookies per pan for a total of 24 cookies.
Place the cookies inside the preheated oven and bake for 10 to 12 minutes. Make sure not to overbake. Once done baking, remove from the oven and let them cool on the pan for about 3 to 5 minutes. After that, transfer the cookies to a wire rack to cool completely. Once they are cooled, store them in an airtight container.
