I’ve been craving lasagna so much for the past week but I can’t commit to making a whole large batch, but I also want it homemade from scratch. Luckily, I found this recipe by Simply Mamá Cooks on YouTube which is perfect and just enough for one or two people!

You can save more money with this recipe and it guarantees no leftovers, but if you want to use this recipe and make a larger batch to feed a crowd, then feel free to double or triple the ingredients. Step 1
Place a large pot on a stove over medium-high heat, then add the olive oil, and heat it before adding the chopped carrot, celery, and shallot. Season them with salt to taste, then saute them until translucent and softened, and push them to one side of the pot.
Step 2
Add the beef and break it apart, then cook it until nice and brown, and add in the salt, basil, garlic, red wine, and tomato paste. Mix everything to combine, then keep cooking it for a few more minutes, add the tomato puree, and rinse the jar with water.
Step 3
Give them a good mix, then add more salt, sugar, and pepper if needed, and let the mixture simmer while covered over low heat for about 20 minutes or so. While waiting for the meat sauce to cook, place a saucepan on a stove over medium-high heat, then add the butter and flour, and whisk them continuously for about 1½ minutes until combined.
Step 4
Add the milk, keep whisking, and let it simmer until it thickens, then season it with salt and pepper to taste, and once it’s thick enough to coat the back of a spoon, turn off the heat. Prepare the pasta sheet from scratch as demonstrated in the video or use store-bought ones, and get 3 sheets the same size and shape as your baking dish.

Start with some meat sauce at the bottom of the casserole, then place a lasagna sheet, add more meat sauce, drizzle the bechamel sauce, and grate the parmesan cheese on top. Repeat the layers with the remaining ingredients putting the mozzarella cheese at the very top, then place the lasagna in an oven preheated at 375°F, and let it bake uncovered for about 25 minutes until bubbly.
