To make homemade fettuccine alfredo, you only need 4 ingredients–fettuccine pasta, Parmigiano Reggiano, salt, and unsalted butter. The key ingredient here is the Parmigiano Reggiano; make sure not to substitute it with other cheese.
Other types of cheese will clump together and not give the same taste. It is a very simple and straightforward dish that is ready in just a couple of minutes.

Fill a pot with water and let it come to a boil. Add 2 teaspoons of sea salt and add the pasta. Cook al dente according to package instructions.
Place a pan over heat and the unsalted butter. Once melted, remove the pasta from the boiling water and transfer it to the melted butter using tongs. Mix and cook for 2 minutes.
Add more pasta water, then add the grated cheese in four batches. You don’t want it to dry too much, so keep adding a little bit of pasta water as necessary. Keep adding the grated cheese and mix after every addition. It should be creamy.
Transfer to a plate and sprinkle more grated cheese on top. Serve and enjoy!
