Place a medium saucepan on the stovetop over high heat, then add 2 cups of water. Bring it to a boil. Once boiling, turn off the burner, and add the water to a large mixing bowl along with a 6 oz box of lime jello. Stir for a few minutes until fully dissolved. Once dissolved, add 6 oz softened cream cheese, then blend everything together until nice and creamy using an electric mixer.
Next, stir in 2 cups of 7up, then place it in the fridge to let it set for about an hour. After this, take it out of the fridge and add 16 oz Cool Whip. Fold together until just combined, then stir in the drained crushed pineapple. Transfer the jello mixture to a casserole dish, flatten it out evenly, then place it in the fridge for three hours to let it set. After the jello sets, top it with some whipped cream and 12 maraschino cherries. Serve and enjoy!
