Preheat your oven to 350 degrees F. Next, crush the saltine crackers with your hands or using a food processor. Once done, transfer the crushed saltine crackers to a large mixing bowl, then add 3 tbsp sugar and one softened stick of butter. Mix and combine them all well. Once done, transfer the mixture to a pie dish. Spread and push them on the bottom as well as on the sides. Place it in the fridge for 15 minutes to let the crust set, then put it in the oven at 350 degrees F for 15 to 20 minutes.
Now, make the filling. Whisk four egg yolks, then add a can of sweetened condensed milk. Mix together until well combined, then add 1/2 cup lemon juice and zest of one lemon. Continue mixing until well combined. Once done, pour it over the crust. Bake it in a 350 degrees F oven for about 15 to 18 minutes until the filling has set. After baking, let it cool down completely, then put it in the fridge overnight. Before serving the pie, spread some whipped cream on top, then cut it into slices.
