Salads are the easiest and quickest dish that you can prepare within just a few minutes and they are perfect when served on the side for regular family mealtime, cookouts, and other special occasions. I have a couple of favorite recipes that I always use when I need to make a yummy side dish, but if you’re a fan of a salad that’s very simple and is filled with lots of veggies, then you might just love this colorful and delicious coleslaw by Kathy’s Vegan Kitchen on YouTube.

This is the perfect party dish that will surely be gone in just a few moments after serving and I’m sure that you and your guests will keep coming back to the table for more servings. What’s also great about this dish just like any other recipe is that you can modify the ingredients to your liking by adding in or changing a specific seasoning or ingredient itself to your preference, plus, you can use leftovers, too!

Step 1
In a blender or food processor, add the raw cashews, water, salsa, apple cider vinegar, and lime juice, then blend everything until smooth and combined, and set the mixture aside.
Step 2
In a large bowl, add the coleslaw mix, black beans, bell pepper, onion, grape tomatoes, jalapeño, corn, cilantro, and salt, then toss everything until combined, pour over the dressing, and continue tossing until evenly coated. Serve and enjoy!
