Start by preheating your oven to 350F and lining a rimmed baking sheet with parchment paper.
In a large bowl, add the ground chicken, egg, breadcrumbs, cauliflower rice, onion powder, garlic powder, parsley, salt, and pepper. Gently mix everything together with your hands until well incorporated.
Take a heaping tablespoon of the mixture and form into a ball. Place on the prepared baking sheet. Repeat with the remaining mixture.
Place in the preheated oven for 10 minutes. After that, transfer to a crockpot. Pour the buffalo sauce, then place the lid. Cook for two hours on low setting.
Make the dipping sauce by combining all ingredients in a bowl.
