Coffee is my weakness and I often make it at home and even order it when I’m outside. With that being said, I enjoy coffee in everything and at any time, even as a flavor in desserts!

Step 1
Dissolve the instant coffee powder in hot water, then in a mixing bowl, beat together the egg yolks and oil, add the rice flour and coffee mixture, and mix them until smooth. In a separate bowl, add the egg whites one at a time while beating continuously until fluffy and it turns into a meringue.
Step 2
Add the meringue to the coffee mixture, then give them a good mix until evenly combined, and pour the batter into a cake roll pan lined with parchment paper. Place it in an oven preheated to 170°C or 338°F, then allow it to bake for about 13 to 16 minutes, once done baking, peel off the parchment paper from the sides.
Step 3
Melt the sweet chocolate in simmering water, then add the milk, and mix them until smooth and shiny, remove it from the water and let it cool down. Place a separate bowl in iced water, then pour in the heavy cream and sugar, then beat them gently until combined, remove it from the ice water, and add the chocolate mixture to the cream mixture.
Step 4
Continue to beat them until well combined, then spread them over the cake, and start rolling the cake over from one side. Hold it in place by wrapping it with the same parchment paper it was baked in, then place it in the refrigerator, and allow it to chill for at least 1 hour. Garnish it with melted chocolate however you want, then it with the remaining cream, and serve. Enjoy!
