Ingredients for Honey Roll Cake:


  • 300ml or 1¼ cups of milk
  • egg yolk
  • 5½ tbsp of sugar
  • 4 tbsp of cornstarch
  • 50ml or 3½ tbsp of lemon juice
  • 2 tbsp of butter
  • 100ml or ½ cup of whipping cream


  • 2 large eggs
  • 5½ tbsp of sugar
  • 3¼ tbsp of honey
  • ½ cup of vegetable oil
  • 20ml or 2 tbsp of milk
  • 1¼ cup of wheat flour
  • ½ tbsp of baking powder
  • 1 tsp of vanilla sugar
  • A pinch of salt


  • Chopped walnuts

How to Make a Honey Roll Cake:

Step 1

In a saucepan, add the yolk, sugar, cornstarch, and half of the milk, then whisk them together until combined, pour in the remaining milk, and keep whisking until incorporated. Place the saucepan on a stove and bring the mixture to a boil while stirring continuously until thickened, then add the lemon juice and butter, and whisk them until dissolved.

Step 2

Transfer the mixture to a large bowl, then cover it with plastic gently pressing it down the mixture as shown in the video, and set it aside to cool. In another large mixing bowl, add the eggs, salt, vanilla sugar, and sugar, then whisk everything together, add the honey, vegetable oil, and milk, and keep whisking until thoroughly combined.

Step 3

In a separate bowl, mix the flour and baking powder, then add it to the mixture, and whisk them until smooth and combined. Transfer the batter to a baking sheet lined with parchment paper, then spread it evenly, and put it in a preheated oven to bake at 180°C or 356°F for about 8 to 10 minutes. Once done baking, flip the cake over a clean cloth or towel, then peel off the paper, and roll the cake over as shown in the video.

Step 4

Let the cake cool while still rolled, and while waiting, prepare the filling. Add the cream to a bowl, then beat it until fluffy and soft peaks form, and set it aside. Grab the cooled filling, then beat it until fluffy and smooth, and pour in the whipped cream. Give them a quick fold, then beat them until incorporated, scrape the sides, and give it a final fold and mix.

Step 5

Gently unroll the cake, then spread the filling over the cake evenly making sure to reserve some for later, then sprinkle the chopped walnuts over the filling. Roll the cake and transfer it to a plate making sure that the seam side is down, then scrape the remaining filling to a piping bag, and pipe it on the top of the cake to decorate. Garnish with more chopped walnuts, then serve, and enjoy!
