Ingredients:

Crust

  • 100g (3.5 ounces) biscuits
  • 40g (¼ cup) melted butter

Honey cream cheese

  • 5g (1½ tsp) gelatin
  • 25ml (1½ tbsp) water
  • 200g (1 cup) cream cheese
  • 50g (¼ cup) yogurt
  • 60g (2¾ tbsp) honey
  • 200g (1 cup) whipping cream
  • 2.8g (½ tsp) gelatin
  • 5ml (1 tsp) water
  • 50g (¼ cup) orange juice
  • 5g (½ tbsp) sugar

Directions:

Step 1

Place the biscuits inside a Ziploc bag, then crush it with a rolling pin until it turns into a fine powder, add the melted butter into the bag, and mix them together until fully combined. Pour the crushed biscuits at the bottom of a springform pan, then press it until nice and flat, and refrigerate for about 20 minutes to let the crust set. Add the gelatin to a small cup or mixing bowl, then add water, and set it aside for about 15 minutes. In a large mixing bowl, add the cream cheese breaking until smooth, then add the yogurt and honey, and whisk them together until smooth. Place the bowl of gelatin inside a bowl with warm water, then mix it around until melted, and add it to the cream cheese mixture, mix them together until incorporated and combined. In a large mixing bowl, add the whipping cream, then whisk it until smooth before adding it to the cream cheese mixture, and gently mix them together until well combined. Reserve about 2/3 cup of this mixture, then add the rest to the top of the crust, spread it evenly, and freeze for about 20 minutes.

Step 2

Add gelatin to water, then set it aside, and wait for 15 minutes. Squeeze a fresh orange on a saucepan, then add water followed by the gelatin, and turn the heat on to low. Give them a good stir, then bring them to a boil, and stir again until the gelatin is melted. Let the mixture cool off before adding it to the reserved cream cheese mixture, whisk them in until uniform, then add about 2 drops of yellow food coloring, and whisk them again. Pour this on top of the white cheesecake, cut a piece of bubble wrap to the size of the springform pan, then put it on top of the yellow cheesecake pressing it down gently, and freeze for about 3 hours to set. After 3 hours, carefully remove the bubble wrap, then wait for 90 minutes before unmolding the cheesecake. Submerge a towel or cloth in warm water, wring, then wrap around the springform pan until the cheesecake releases, and slowly unmold it. Pour honey all over the top, then slice, serve, and enjoy!
