Ingredients for Slow-Cooked Lima Beans:

  • 2 pounds of dried lima beans
  • ham hock
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 4 cloves of garlic, minced
  • Chicken stock or water
  • Salt and pepper, to taste

How to Make Slow-Cooked Lima Beans:

Step 1

Prepare and soak the lima beans overnight, then drain off the water, and rinse them under cold water. Put the ham hocks in a large pot or Dutch oven, then place it on a stove over medium-high heat.

Step 2

Cover the ham hocks with chicken stock or water, then bring them to a boil, and once boiling, reduce the heat to low. Let it simmer for about 45 minutes to 1 hour or until the ham hocks start to soften.

Step 3

Once done simmering, add the soaked lima beans to the pot followed by the diced onion, bell pepper, and minced garlic, then add more chicken stock or water to cover the beans and vegetables by about an inch, and cover the pot with the lid.

Step 4

Let it simmer over low heat for about 4 hours while stirring occasionally, then add more stock if needed, and at the last 30 minutes of cooking, check the tenderness of the ham hocks.

Step 5

Remove them from the pot, then shred the meat, and discard any excess fat and bones. Put the shredded meat back into the pot, then give them a good stir to combine, and season them with salt and pepper to taste. Turn off the heat, then serve, and enjoy!
