Ingredients for Buttery Pineapple Cookie:
Dough
1¼ cup of cake flour
3 tbsp of cornstarch
125g or ½ cup of salted butter, softened
2 egg yolks
Egg Wash
1½ tsp of oil
2 egg yolks
Pineapple Filling
2 cans of pineapple slices, drained
¼ cup of sugar
¼ tsp of ground cinnamon
How to Make Buttery Pineapple Cookie:
Pineapple Filling
Drain the juice of the canned pineapples, then add the pineapple slices to a blender, and blend them until smooth and there are no more chunks.
In a bowl, add the sugar and ground cinnamon, then stir them until uniform, and set them aside for later.
Place a pan on a stove over medium heat, then pour in the blended pineapple spreading it evenly, and pour in the sugar-cinnamon mixture.
Give them a good mix, then cook them for about 45 to 50 minutes while stirring consistently until dark brown and sticky, and then turn off the heat.
Place the pan on a cooling rack and allow the filling to cool to room temperature, then once cool shape them into small balls, and set them aside.
Shortbread Dough
In a large bowl, add the flour and cornstarch, then give them a good stir, and in a separate bowl, break the softened butter.
In the butter, add in the egg yolks, then gradually pour in the flour mixture, and mix gently in between each addition until a smooth dough ball forms.
Place the dough ball in the refrigerator, then let it chill for about 15 minutes, and then roll them into small balls evenly.
Assembling and Baking
Flatten each dough ball, then place a filling at the center, and reshape it into a ball until the filling is completely covered.
Place them on a baking sheet lined with aluminum foil, then make sure to space them evenly, and then place them in a preheated oven at 320°F.
Allow them to bake for about 20 minutes, then when almost done baking, mix the oil and egg yolks, and brush them over each cookie.
Bake the cookies for an additional 15 minutes until golden brown, then serve, and enjoy!
