Crust
Pie
Pudding
Whipped Cream
Step 1
Preheat your oven to 350°F, then grease a 9-inch pie plate with nonstick cooking spray, and set it aside. Put 45 wafers in a food processor, then pulse them until finely crushed, and reserve ¼ cup for topping later.
Step 2
Add in the melted butter, then give them a good mix, and transfer it to the bottom of the prepared pie plate pressing it down firmly. Put it in the preheated oven and allow it to bake for about 10 to 12 minutes, then remove it from the oven, and let it cool down while preparing the pudding.
Step 3
Place a medium-sized saucepan on a stove over medium heat, then add the sugar, flour, and salt, and give them a good mix. Pour in the milk while whisking consistently, then bring it to a low boil for about 7 to 10 minutes until thickened while continuously whisking, and then reduce the heat to low.
Step 4
In a small bowl, add the egg yolks along with a couple of tablespoons of the hot milk mixture, then give them a good whisk, and add everything back into the saucepan with the hot milk mixture.
Step 5
Stir the mixture continuously for about 3 to 4 minutes until thick and pudding consistency, then turn off the heat, remove the saucepan from the stove, and quickly stir in the vanilla extract.
Step 6
Arrange the banana slices over the crust, then put half of the pudding mixture over the bananas, and spread it evenly. Put the remaining 20 vanilla wafers over the pudding, then put the rest of the bananas over the wafers, and top them with the remaining half of the pudding spreading it evenly.
Step 7
Place it in the refrigerator, then let it chill until cooled completely, and prepare the whipped cream until ready to serve. In a mixing bowl, beat the heavy cream, sugar, and vanilla until soft peaks form, then spread it over the pie nicely, and sprinkle the reserved crumbs at the top. Serve and enjoy!
