Frosting:
Preheat your oven to 350 degrees F and grease a 9 x 13 casserole dish. Set it aside. In a large mixing bowl, combine 2 cups of all-purpose flour, 1/8 tsp salt, and 2 tsp baking soda. Whisk together. Next, add one can of pineapple with its juice, two eggs, 1 1/2 cups white granulated sugar, and 1 tsp vanilla extract. Stir until combined. Once done, pour it over the prepared casserole dish. Place it in the preheated oven and bake for 30 to 35 minutes. In the meantime, make the frosting.
Melt 1 stick of butter in a pot, then add 1 cup of white granulated sugar and 3/4 cup evaporated milk. Bring it to a boil and simmer for five minutes. Once done, turn off the heat and remove from the stove. Stir in 1 1/2 cups shredded coconut and 1 cup of chopped nuts. Set it aside and let it cool. Back to the cake, remove it from the oven once done baking, and poke some holes all over it. Now, take the frosting and pour it all over the cake. Spread it evenly and nicely, covering the whole top. Serve and enjoy!
