Anyone can make it at home with this simple recipe by siZning. How can you even resist these pastel-colored cookies? They are the perfect pair for a cup of coffee or tea.

I remember eating these cookies growing up. They always came in different bright colors, and I never saw them in pastel colors like these. I always pick the pink meringue cookies and buy plenty of them. I love that they melt in my mouth easily and are perfectly sweet. It is one of those cookies that are so addicting that you can’t stop grabbing one until they are all gone.

Food coloring:
Add the egg whites, sugar, and vanilla extract in a heat-proof bowl. Whisk until well combined.
Place the bowl over a pot with boiling water and keep whisking until it reaches 113F. Remove it from the pot.
Using a hand mixer, whip the mixture at high speed until thick. If the tip is slightly bent when lifted, lower the speed to medium/low speed and let it stabilize for 1 to 2 minutes.
Divide the meringue into 4 and place them in each bowl. Add a drop of food coloring on each bowl. One color per bowl. Mix well.
Put equal parts of each color in a piping bag with a pod. Line a baking sheet with parchment paper. Use a sugar powder and circular cutter to determine the size and position on the parchment paper. Squeeze the meringue to size.
Place in the 185F to 194F preheated oven and bake for 2 hours. Once done, cool them completely in a dry environment.
