Preheat your oven to 400 degrees F and grease a 9 x 12 casserole dish. Seat aside. Next, melt butter in a skillet over medium-high heat, then add the chopped onions. Season with some salt and ground black pepper to taste and 2 tsp fresh chopped thyme. Cook for five to eight minutes or until the onions turn soft. Once soft, reduce the heat to medium, then pour 1/4 cup beef broth and 2 tbsp white wine. Mix well, then add the minced garlic. Continue to cook until garlic is fragrant, then turn off the heat and let it cool slightly.
Next, cut the chicken breasts in half horizontally and create pockets. Season the chicken breasts with salt and ground black pepper to taste, 2 tsp garlic powder, and 1 tsp ground thyme. Stuff the chicken breast pockets with French onion, along with some shredded mozzarella, and parmesan cheese. Seal each with toothpicks. Transfer the remaining French onion to the bottom of the casserole dish along with the remaining 1/4 cup of beef broth.
Heat some oil in the same skillet, then add the stuffed chicken breasts. Sear them on each side until browned. Once done, transfer them to the casserole dish and spoon some of the French onion sauce over each chicken breast. Sprinkle some thyme and bake in the preheated oven for 15 to 20 minutes. Serve and enjoy!
