Stir-Fry Sauce
Step 1
Prepare the aromatics as demonstrated in the video and set them all aside for later. Thinly slice the beef against the grain, then place it in a large bowl, and add in the soy sauce, cooking wine, water, sesame oil, and baking soda.
Step 2
Let the beef marinate for about 15 to 20 minutes, then add in the cornstarch and oil, and mix them until well incorporated. In a small bowl, add the soy sauce and cornstarch, then mix them until smooth, add the sugar, oyster sauce, hoisin sauce, sesame oil, cooking wine, and dark soy sauce, and continue to mix until combined.
Step 3
Slowly pour in the water, then give them a good mix, and set the sauce aside for later. Place a large frying pan, wok, or Dutch oven on a stove over high heat, then add about 3 to 4 tablespoons of oil, and once shimmering, add the sliced beef. Sear them for about 2 to 4 minutes or until nice and brown, then remove them from the pan, and set them aside for later.
Step 4
Add more oil to the same pan, then add the ginger sliced, and toast them for about a minute or until slightly brown. Add more oil, then toss in the onion slices, and stir fry them for about 2 minutes until soft and slightly brown. Once the onions are translucent, add in the garlic, then slowly pour in the sauce, and give them a good stir.
Step 5
Once the sauce has thickened and is dark brown, put the beef back into the pan, and continue to stir-fry for 3 to 4 more minutes or until the beef is completely cooked. Add in the green onions, then give them a good toss, and stir fry for another minute. Add more diced green onions, then serve it with some steamed rice, and enjoy!
