Step 1
Place a large pot on a stove over medium or low heat, then add the butter and let it melt, add the onion, and saute until softened. Add the flour, then give them a good whisk until the flour is absorbed by the butter, season them with Old Bay, salt, and pepper, and continue to cook while stirring continuously for an additional 90 seconds.
Step 2
Slowly pour in the half and half while whisking consistently, then bring it to a simmer, and allow it to thicken making sure to stir now and then. Pour in the heavy cream slowly, then add the sherry and crab meat, and give them a gentle stir to combine. Lower your heat, then continue to cook for about 5 to 10 more minutes, and adjust the flavor to taste if needed. Serve and enjoy!
