Ingredients for Stovetop Sausage Potato Soup:

Seasonings

  • 1 tsp of dried basil
  • ½ tsp of dried parsley
  • ½ tsp of dried oregano
  • ½ tsp of mustard powder
  • ¼ tsp of pepper

Soup

  • 1 pound of ground Italian sausage, hot or mild
  • 2 tbsp of butter
  • 1 yellow onion, diced
  • ½ cup of carrots, diced
  • 2 ribs of celery, diced
  • 3 cloves of garlic, minced
  • 3 tbsp of flour
  • 1 tsp of soy sauce
  • 1 tsp of hot sauce
  • 5 cups of chicken broth
  • 1 cup of heavy cream
  • 1¼ pounds of red potatoes, cut into 1-inch cubes
  • 2 cups of shredded cheddar cheese, optional

Garnish

  • Red pepper flakes
  • Fresh parsley

How to Make Stovetop Sausage Potato Soup:

Step 1

Place a large pot on a stove over medium heat, then remove the casings of the sausage, and the sausage to the pot. Break them apart, then cook them until nice and brown, and set them aside while leaving 1 tablespoon of drippings in the pot.

Step 2

Now, add the butter and let it melt, then add the onions, celery, and carrots, and cook them for about 5 minutes. Add the garlic and continue to cook for 1 more minute, then add the flour, stir, and keep cooking for 2 minutes.

Step 3

Pour in the broth, then scrape the bottom, and add the heavy cream, hot sauce, soy sauce, and seasonings while stirring continuously. Bring the soup to a boil, then reduce it to a simmer, and add the cubed potatoes.

Step 4

Continue to simmer while uncovered for about 20 to 25 minutes or until fork tender, then add the cooked sausage, and stir them to combine. Reduce the heat to low, then add the cheddar cheese, and stir to combine. Garnish with red pepper flakes and parsley, then serve, and enjoy!
