Some people call this creamy garlic butter Tuscan salmon. Anyone can make this dish at home, as it is a no-fail recipe. We love serving it with mashed potatoes, white rice, or pasta. Pat dry the salmon pieces. Carefully remove the skin using a knife. Season it with salt and pepper on both sides.
Place a cast iron pan over high heat, then add neutral high heat cooking oil. Once hot, lay the salmon pieces. Cook for 2 minutes and flip. Cook for 45 seconds to 2 minutes, depending on the size of your fillet. Make sure not to overcook it.
Add melted butter to the same pan and add the spinach. Cook for 1 minute, then add the tomatoes, garlic, and spring onions.
Pour the cream and let it warm up. Next, add all the cheese, salt and pepper, then mix well. Make a taste test and adjust seasonings if needed.
Bring back the salmon and cook for 5 to 10 minutes depending on the size of your salmon. Turn off the heat, add a squeeze of lemon, and enjoy!
