I’ve tried different kinds of fritters before but never hot water cornbread fritters, and I was intrigued when I first heard of them. So, I gave it a try and my life was never the same ever since, it was one of the best things I have ever eaten, and it is also a snack that I can never get tired of.

Step 1
Place a saucepan on a stove over medium-high heat, then fill it with water, and bring it to a boil. While waiting for the water to boil, whisk together the cornmeal, flour, baking powder, and salt in a heat-proof bowl until combined.

Once the water is boiling, turn off the heat, then carefully pour the hot water into the dry mixture a little at a time, and whisk the mixture well. Keep stirring the mixture until well combined, then let it sit for a few minutes, and allow it to cool for a bit.

Step 3
Meanwhile, place a deep frying pan on a stove over medium heat, then add some oil, and let it heat up. Once the oil is hot, scoop small amounts of the dough into the oil, and fry them in batches to not overcrowd the pan.
Step 4
Cook the fritters for about 3 to 4 minutes on each side until nice and golden brown, then place them on a wire rack to drain off the excess oil, and serve immediately. Enjoy!
