This lasagna soup is so delicious that you just can’t stop eating it until it’s all gone. The ingredients are pretty similar to a usual lasagna except for a few things but don’t worry because all of the ingredients needed here are pretty easy to find, so rest assured you can give this a try today.

This soup is one of my all-time favorites and I make it whenever I can, and even my family loves it. Cheese Topping
Step 1
Place a large pot on a stove over medium-high heat, then cook the sausage for about 8 to 10 minutes or until nice and brown, and make sure to break them apart as you stir. Drain off the excess grease, then add the onion, and continue to saute it for 5 to 7 more minutes or until softened and translucent. Add the garlic and cook them for about 1 to 2 minutes until fragrant, then reduce the heat to low, and pour in the beef broth followed by the tomato sauce and diced tomatoes.

Step 2
Season them with Italian seasoning, salt, onion powder, and black pepper, then add the bay leaves, and give them a good stir until combined. Turn the heat to high, then bring the mixture to a simmer, and once simmering, reduce the heat to medium-low. Let it continue to simmer for 15 to 20 more minutes, then place the broken lasagna on top, and cook them for an additional 15 minutes or until the pasta is al dente.
Step 3
While waiting for the pasta to cook prepare the cheese topping, simply combine the ricotta, parmesan, mozzarella, and Italian seasoning until uniform and incorporated, then put it in the refrigerator until ready to serve. Check the pasta and once done, ladle the soup into a serving bowl, then add a dollop of the prepared cheese topping on top, and serve. Enjoy!
