Step 1
Cut the chicken through in half if it’s too thick, then salt it with salt and pepper on both sides. Place a Dutch oven on a stove over medium-low heat, then heat the oil, and add the seasoned chicken. Sear them well until both sides are nice and brown, then remove them from the pan, and set aside in a plate. In the same pot, add the butter followed by the sliced onions, then give them a good toss, and season them with salt and red pepper flakes.

Step 2
Cover the pot with the lid, then allow them to cook for about 15 minutes over low heat, then give them a good stir, and cook for another 5 minutes until brown and caramelized. Add the flour, then stir, and cook for 1 minute before slowly pouring in the beef stock. Add the thyme, then stir everything together until well combined, and allow the sauce to thicken.
Step 3
Put the cooked chicken back into the pan including the juices, then make sure that they are coated well with the onion and sauce, and top each piece of chicken with 2 slices of cheese. Cover the pot with the lid again, then cook them for another 5 minutes, and garnish with chopped chives. Serve the chicken smothered with onions and sauce on top, enjoy!
