Cornbread is an easy and quick-to-make bread made from cornmeal. You can pair it with plenty of dishes, such as chili, chicken, cream cheese, spaghetti, or steak. For this recipe, you don’t need to look for a dish to pair it with, as you have the delicious ground beef mixture on the bottom. The savory flavors pair perfectly with the freshly made cornbread and melted cheese. It’s so good, you have to try it at home!

Place a pan over medium heat, then add the ground beef. Break into pieces and cook until browned.
Mix in the onion and garlic, then drain the grease.
Add the cream of corn, regular corn, Rotel tomatoes, and chilies. Mix until well combined.
Add the taco seasoning, cumin, onion powder, salt, and pepper. Mix well, then let it simmer for 5 minutes uncovered.
Turn the heat off, then add 2 cups of cheese. Mix until the cheese has melted completely. Set it aside.
In a large mixing bowl, add the jiffy mixture, eggs, and milk. Mix well, then preheat your oven to 400F.
Transfer the ground beef mixture into a greased casserole dish. Spread evenly, then pour the cornbread mixture on top. Bake for 17 to 20 minutes until it turns brown on top.
Once done baking, remove from the oven and sprinkle the remaining cheese on top. Place back in the oven and bake until the cheese melts.
Let it rest for 10 minutes before serving. Enjoy!
