Start by preheating your oven to 350F.
Place a pan over medium heat and add the bacon slices. Cook for 5 minutes, then add the chopped onion. Saute for 3 to 4 minutes or more until translucent.
Add 1 pound of thawed hash browns into the bacon and onion, then season with salt. Mix, then cook for 5 minutes.
While waiting for the hash browns to cook, in a mixing bowl, add 7 eggs, followed by 1 teaspoon of Italian herbs, 2/3 cup of cream, and 2 tablespoons of parsley. Whisk until well combined.
Once the hash brown is cooked, transfer to a casserole, then pour the egg and milk mixture on top. Lightly mix it using a fork to let the liquid go down to the bottom.
Sprinkle shredded cheese on top and place inside the oven. Bake at 350F for about 60 minutes.
