Place the potatoes in a pot and fill it with water. Add 1.2 tablespoon of salt and place over heat with the lid on. Let it boil for 15 to 20 minutes until it is soft enough. Poke it with a stick to check if it is cooked well.
Drain the water and let the steam evaporate.
Line a baking sheet with parchment paper and place the potatoes. Tread each one with a potato masher. The wavy shape of the tool makes the bumpy surface. If you don’t have a potato masher you can use an object with a flat bottom, but cover the potatoes with parchment paper first before pressing.
After pressing, dry them for about 5 minutes in order to make them crispier.
Add the melted butter and minced garlic in a small bowl and mix with 2 tablespoons of olive oil. Brush the mixture over the potatoes.
Season them with salt and oregano.
Place inside a 395F preheated oven and bake for about 30 minutes.
Make the sauce by combining all ingredients.
Once done, season with pepper and garnish with chopped parsley. Serve with sauce and enjoy!
