Ingredients

  • 16 oz mild or spicy Italian sausage
  • 2 cups of cooked dry penne pasta
  • 1 (14 oz) can diced tomatoes
  • 2 1/2 cups of freshly grated mozzarella
  • 1 yellow onion (chopped)
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 1 to 2 teaspoons of black pepper
  • 5 garlic cloves (chopped)

Instructions

Step 1:

Take a 9 x 13 baking dish and spray it with cooking spray, then set it aside. Preheat your oven to 350F.

Step 2:

Place a pan over heat and add the sausage. Break it into pieces and cook until browned. Once done, transfer to a plate.

Step 3:

In the same pan, add 2 tablespoons of olive oil, followed by the chopped onion and minced garlic. Saute until translucent for a minute.

Step 4:

Add the diced tomatoes and season with salt, pepper, oregano, and basil. Mix, then cook over medium heat for about 5 minutes.

Step 5:

Put back the cooked sausage and turn the heat to low. Cover it with the lid and let it simmer on low for about 10 minutes.

Step 6:

Add the cooked pasta to the meat mixture and mix everything well. Next, add half of the cheese and mix well until melted.

Step 7:

Transfer half of the meat pasta to the pan and spread evenly. Take half of the remaining cheese and sprinkle on top. Add the remaining meat pasta mixture over it, then sprinkle leftover cheese on top. Press the cheese flat and cover with aluminum foil.

Step 8:

Place inside the oven and bake for about 15 to 25 minutes at 350F. After that, remove the foil, and put it back into the oven. Let the cheese melt a little bit more.

Step 9:

Sprinkle dry basil on top, then serve. Enjoy!
