It’s been a tradition of my family to bake goodies every weekend during the fall season, which is why I’m always on the lookout for new recipes to try. Last week, we tried these cream cheese pumpkin squares from Heartway Farms on YouTube, and boy, it did not disappoint. The pumpkin squares are moist, flavorful, and easy to make. Preheat your oven to 350 degrees F. Next, to your stand mixer bowl, add four eggs and 2 cups of sugar. Beat until combined. After this, add 1 cup of vegetable oil, 2 cups of pumpkin puree, 2 tsp baking soda, 1 tbsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp ground cloves, and 1/2 tsp allspice while continuously whisking everything together. Lastly, fold in 2 cups of flour until batter forms. Once done, pour the batter into an ungreased baking pan, spreading it evenly across the pan. Place it in the preheated 350 degrees F oven and bake for 15 to 20 minutes.

In the meantime, make the cream cheese frosting. To the bowl of your stand mixer, add 8 oz cream cheese and 1/2 cup softened butter. Beat until smooth. Next, add 3 cups of powdered sugar and 1 tbsp vanilla extract. Beat at high speed until the consistency becomes light and fluffy. Back to the pumpkin cake, once it’s done baking, remove it from the oven and cool it completely. After this, spread the cream cheese mixture over the top, sprinkle some ground cinnamon (optional), then cut it into squares. Serve and enjoy!
