Heat 1 tbsp sesame oil in a large pot over medium heat. Add the minced garlic and saute for a minute. After this, add 4 cups + 3 tbsp good quality chicken stock and one small chopped chicken breast. Turn up the heat and bring everything to a boil. Once boiling, let it simmer for about five minutes. After simmering, add the drained sweetcorn and season with 1/8 tsp white ground pepper. Mix well. Bring it back to a boil and simmer for another five minutes.

Now, thicken the soup by stirring in slowly a cornflour slurry (2 tbsp cornflour mixed with 6 tbsp cold water). Next, add the whisked eggs slowly while stirring the soup continuously. Taste test the soup at this time and season as you like. Once done, remove it from the heat and serve with some chopped scallions.
