Love munching on snacks? Try these quick and easy banana oatmeal cookies by valerie is cooking, and you will never buy breakfast bars from the the stores again. These have the perfect texture and sweetness – plus, it doesn’t contain sugar, eggs, or flour. You will surely love the combination of dark chocolate chips, pecans, and cranberries! Start by peeling the bananas and placing them in a bowl. Mash them with a fork until it’s mushy.
Add 1/4 teaspoon of salt and 1/4 teaspoon of ground cinnamon to mashed bananas. Mix until well incorporated.
Add 1 1/2 cups of rolled oats and 1/4 cup of dark chocolate chips, followed by 1/2 cup of chopped pecans and 1/3 cup of dried cranberries. Mix everything until well combined.
Set the mixture aside for about 10 minutes.
Get a spoonful of the mixture and form it into cookies using your hand. Place in a baking sheet lined with parchment paper or a silicone mat. Repeat with the remaining mixture. Make sure they are spaced.
Place inside the oven and bake the cookies at 375F for about 20 to 22 minutes. The baking time and temperature will differ for every oven. You may need to make adjustments to get the right result.
