To start, slice six peaches and place them in a cast iron skillet. After this, add 2 tbsp brown sugar, 1 tbsp cinnamon, 1 tsp vanilla extract, and 20 oz of your favorite bourbon. Mix everything well, then place the cast iron skillet in your smoker grill. Set it to 180 degrees and smoke the peaches for 30 minutes.

In the meantime, combine 3/4 cup of flour, 3/4 cup of brown sugar, 1/2 tsp of baking powder, 8 tbsp of melted butter, 1 – 3 tsp of bourbon, and 1 tsp of vanilla extract in a bowl. Work the mixture out until you have a crumbly consistency. Transfer the crumble over the smoked peaches and dust the top with some cinnamon sugar. Place it back in the smoker, set it at 350 degrees, and cook for 35 minutes. Once done, let it sit for a few minutes, then top it with vanilla ice cream. Serve and enjoy!
