Ingredients:
Base
- 90 grams or 3.2 ounces of cookies
- 45 grams or 3¼ tbsp of butter, melted
Cream Cheese Filling
- 1 (8-ounce) block of cream cheese, softened
- 70 grams or ¼ cup of sugar
- 200 grams or ¾ cup of heavy cream
- 1 tsp of lemon juice
Directions:
Step 1
Place the cookies in a Ziploc bag, then crush them until fine crumbs, add in the melted butter, and shake them until mixed and well combined. Line a loaf pan with plastic wrap, then pour the cookie crumbs into the prepared pan, and spread it out evenly at the bottom pressing it down tightly in the process.
Step 2
Place it in the refrigerator, then let it chill for a few hours or until completely set, and while waiting prepare the filling. In a large mixing bowl, add the cream cheese, then break it until smooth and creamy, add the sugar, and stir them together until incorporated.

Step 3
Add the lemon juice, then give them a good stir to combine, and set it aside. In another bowl, add the heavy cream, then beat it until soft peaks form, and add it to the cream cheese filling. Fold them together until incorporated, then pour them into the chilled base, and smooth out the surface as evenly as possible.
Step 4
Put it in the freezer, then allow it to freeze for about 4 hours or until completely set. To unmold, place it upside down on a plate or serving tray, then lay a warm towel over it, and slowly lift the loaf pan up. Dip the knife in hot water, then slice the cheesecake with it, and serve. Enjoy!
