Salmon croquette is a dish I never thought I would love as much as I do now, it’s a dish that tastes so good and addicting that I just can’t seem to have enough of it. What I love about this dish even more is that it is super easy and inexpensive to make, plus, you can serve them at any time of the day on the side of your favorite dish or as is. Ingredients:

  • 2 (5-ounce) cans of salmon
  • 2 slices of toast bread
  • Panko breadcrumbs, or more toasted breadcrumbs
  • 2 tsp of Louisiana hot sauce, optional
  • ½ tsp of seasoned salt
  • ¼ tsp of lemon pepper
  • ¼ tsp of granulated garlic powder
  • ¼ tsp of granulated onion powder
  • ½ tsp of dried Italian herb blend
  • 2 large eggs

*You can use any and as many seasonings as you want according to taste

Directions:

Step 1

Break the toast into small pieces, then add them to a food processor, and pulse them until fine crumbs. In a large mixing bowl, add the drained salmon and breadcrumbs, and season them with garlic powder, seasoned salt, lemon pepper, onion powder, Italian herb blend, and hot sauce. Add in the eggs, then mix everything together until well combined and incorporated, and set the mixture aside.

Step 2

Spread some breadcrumbs on a deep baking sheet, then scoop some of the salmon mixture, shape it into an oblong or pattie, and coat it well with breadcrumbs. Place the coated salmon in a separate tray or plate, then continue coating the remaining salmon, and set them aside.

Step 3

Preheat enough oil to 350°F, then carefully place the coated salmon in batches to not overcrowd the pan, and cook them until deep golden brown in color and crispy. Once done cooking, set them on a plate lined with a paper towel, then cook the rest of the salmon, and serve. Enjoy!
