This recipe by Mr. Make It Happen is so good and satisfying that you’d probably want to eat it every day! The first time I saw the video tutorial, I instantly knew that this was a dish that the whole family would love and might even request for me to make often. It takes some time and a couple of steps but once you get used to them, everything will be smooth and easy, plus, the result is super worth it.
Beef Short Ribs
Curry Mashed Potato
Step 1
Season all sides of the short ribs with salt evenly, then in a large mixing bowl, add the jerk paste, jerk seasoning, lime juice, pepper, brown sugar, soy sauce, ginger paste, garlic paste, green seasoning, some all-purpose seasoning, ground cinnamon, allspice, and a pinch of bouillon powder. Whisk them all together until combined, then adjust the taste, add the fresh thyme, and give them a good mix.
Step 2
Place the short ribs into the marinade, then give them a good toss until well coated, and let them chill in the fridge for about 1-4 hours. Heat up a skillet on a stove over medium-high heat, then add some avocado oil, and place the marinated ribs pressing them down nicely. Cook until all sides are evenly seared, then remove and set them aside, and in the same pan, add the veggies.

Step 3
Toast them a bit before adding the leftover thyme along with some more oil. Pour in the leftover marinade, then bring it to a simmer, pour the beef broth, and bring them to a boil. Transfer them to a pressure cooker and cook them on a high setting for about 55 minutes. Place a skillet pan on a stove over medium-high heat, then melt the butter, and add the curry paste, turmeric, all-purpose seasoning, and salt to taste.
Step 4
Give them a good stir, then add the beef bouillon powder and heavy cream, and stir them together to combine. Bring it to a boil until reduced and thickened, then let it simmer for about 1 to 2 minutes, and gradually pour it in the mashed potatoes while mixing well.
Step 5
Strain the ribs and veggies on another pot, then bring the broth to a boil before adding in some slurry or cornstarch water mixture, and allow it to boil until thick and has a gravy consistency. Serve curry mashed potatoes topped with beef ribs, then pour the gravy all over the top, and serve. Enjoy!
