Place a large frying pan over medium-high heat. Add oil, chopped onions, and minced garlic. Saute until the onions are soft and the garlic is fragrant.
Add one pound of lean ground beef and break it into pieces. Cook until browned. Remove any grease if there is any.
Pour one cup of tomato sauce and one cup of water into the ground beef, followed by 1/4 cup of taco seasoning. Mix everything until well combined and let it come to a boil.
Add the uncooked shell pasta and mix well with the mixture. Cook until al dente. Make sure to stir often to avoid burning.
Once the pasta is cooked and the sauce has reduced, remove the pan from the heat. If it’s too dry, you can add a little bit of water and adjust the seasonings.
Sprinkle 1 cup of shredded cheddar or mozzarella cheese over the pasta and mix until well incorporated. Let the residual heat melt the cheese. This will make the sauce thick. Sprinkle chopped parsley on top and serve. Enjoy!
