This recipe by Food Fusion on YouTube looks so good and tastes equally delicious, this is also one of my favorite ways to prepare strawberry tart because it’s so creamy and full of fresh strawberries. I can never have enough strawberries which is why I loved it even more because the whole tart is covered with lots of it! I can never get tired of eating this and I might even make this for special occasions or holidays, too.

Ingredients:

Tart Crust

  • 10½ tbsp or ¾ cup of butter, unsalted, and softened
  • ½ cup of powdered sugar
  • egg
  • ¼ tsp of salt
  • ½ tsp of vanilla extract
  • 2½ cups of all-purpose flour

Custard

  • 4 egg yolks
  • ¼ cup of sugar
  • 4 tbsp of corn flour
  • 1 tbsp of cream
  • 1 tsp of vanilla extract
  • 2 cups of full-cream milk
  • 1 tbsp of butter

Strawberry Filling

  • 1¼ cups of fresh or frozen strawberries, chopped
  • ½ cup of caster sugar

Topping/ Garnish

  • Strawberry slices
  • Mint leaves

Directions:

Prepare the Tart Crust

  1. Add the butter to a large mixing bowl, then beat it well until smooth, add the sugar, and continue to beat them together until combined and creamy. Add the egg, salt, and vanilla extract, then beat them again until incorporated, gradually add the flour, and continue to beat them together over low speed until the texture is crumbly.
  2. Transfer them to a clean counter, then shape them into a dough, and knead until smooth. Cover the dough with plastic wrap, then place it in the refrigerator, and let it chill for about 10 minutes. Once ready, remove the plastic, then sprinkle some flour, and roll out the dough. Now, lay the dough in a 9-inch tart pan, then press it firmly down the bottom and the sides, and trim off the excess.
  3. Using a fork, prick holes all over the bottom, then put it in the freezer, and let it set for about 30 minutes. Crumple a parchment paper, then open it up, and lay it on top of the dough. Fill the top with some baking weights, then bake it in a preheated oven at 180°C or 356°F for about 20 minutes, once done baking, remove the pie weights, and let it cool down completely.

Prepare the Custard

  1. In a saucepan, add the egg yolks, sugar, corn flour, cream, and vanilla extract, then gradually pour the milk while whisking until well combined, and turn on the heat to low. Whisk them together continuously for about 4 to 5 minutes until it thickens, then turn off the heat, add the butter, and keep on whisking until combined.
  2. Transfer it to a bowl, then cover it with a cling wrap, and set it aside to cool at room temperature. Once cooled down, remove the plastic, and give it a good whisk until creamy. Transfer it to a piping bag and set it aside for later.

Prepare the Strawberry Filling

  1. Place a saucepan on a stove over medium heat, then add the strawberries and caster sugar, then mix them well until combined, and cook them for about 4 to 5 minutes until it has thickened. Set it aside and let it cool completely.

Assemble the Tart

  1. Simply pipe the custard on the crust, then spread it evenly, and put it in the fridge to chill for about 10 minutes. Once done chilling, add the strawberry filling on top, then spread it all over until covered and even, and then put it back in the fridge to chill for a few more minutes. Once ready, garnish and decorate the top with strawberry slices and mint leaves, then serve, and garnish.
