Lemon Pound Cake Batter
Lemon Glaze
Step 1
Grease a 10-inch loaf pan, then line the bottom with parchment paper, and dust the sides with flour before setting it aside. In a large mixing bowl, add the sugar and lemon zest, then mix them together by hand for about 2 minutes or until it becomes well combined and slightly yellow. Add the butter, then mix them together for about 4 to 5 minutes or until light and fluffy, add the oil, and continue mixing until incorporated.
Step 2
Add the eggs one at a time making sure to mix them well in between each addition, then add the lemon juice, and keep mixing until combined. Make sure to not overmix the batter and then set it aside. In a separate medium-sized mixing bowl, sift together the flour, baking powder, and salt, then give them a good mix, and then fold this into the batter in 3 addition alternating it with the yogurt. Make sure to fold them gently in between each addition until combined and do not overmix. Transfer the batter to the prepared pan, then spread it evenly, and smoothen out the top.

Step 3
Grease a knife in melted butter, then cut a straight line in the middle of the batter, and place it in the preheated oven. Allow it to bake at 165°C or 330°F for about 50 minutes or until a toothpick inserted at the center comes out clean, then once done baking, let it cool down for about 30 to 40 minutes, and then unmold it. Transfer the cake on a wire cooling rack to cool down completely, then glaze the pound cake, and serve. Enjoy!
Glaze
Mix together the sugar and lemon juice in a mixing bowl until thick and combined, then gradually add the lemon juice, and continue to mix until incorporated. Glaze the cake and let it set for at least 30 minutes before serving.
