Melt the compound chocolate in a double boiler together with 3/4 cup of butter. Mix it well until it melts, then remove it from the heat. Sift 1 1/2 cups of all-purpose flour, 1/4 cup cocoa powder, 1/4 tsp salt, 1 1/2 tsp baking powder, and 1 tsp instant coffee in the bowl of melted chocolate. After this, add 1/2 cup caster sugar and 1 tsp vanilla essence. Mix everything well until well combined, then add 3/4 cup of milk. Continue to mix until smooth texture, then pour it into a parchment paper-lined baking tray. Spread evenly and place in a 350 degrees F oven and bake for 20 to 22 minutes.

After baking, let it cool completely. While waiting, prepare the whipped cream layer. In a large bowl of ice cubes, place a smaller bowl on top, then add 1 cup of cream. Add 1/4 cup icing sugar and 1/2 tsp vanilla essence while beating with a handheld mixer. After this, transfer it to a piping bag. For the chocolate ganache, place the compound chocolate in a mixing jug, then add 6 3/4 tbsp of cream. Microwave for 40 to 60 seconds, then mix. Back to the brownie, pipe the whipped cream mixture on top, and spread it evenly. After this, pour the chocolate ganache on top and spread it evenly. Grate some chocolate on top and refrigerate until chilled.
