We can all agree that icebox cakes are one of the best desserts ever made, in fact, I love them so much that I can probably eat them every day because they are so good! There are a lot of flavors that you can try to make and learn online, but one of my all-time favorite versions is this one by Ashley . The Recipe Rebel on YouTube, you should try it out and see for yourself, you won’t regret it!

In the mixing bowl of a stand mixer or a large mixing bowl, add the heavy whipping cream, then beat it until a soft peak starts to form, and then add the sugar and vanilla. Continue to beat until the stiff peaks form, then add the lemon curd, and fold them together to combine but not completely making sure to leave some swirls. Prepare either an 8×8-inch baking pan, casserole dish, or trifle bowl, then lay half of the graham crackers all over the bottom until covered, and then add half of the whipped cream filling on top spreading it evenly. Place half of the raspberries all over the top, then repeat the layers with the remaining ingredients pressing the graham crackers down gently, and then cover them with plastic wrap. Place them in the refrigerator, then allow them to chill for at least 6 hours or overnight until the crackers have softened, and then serve. Enjoy!
