I love meal preps, so when I discovered this burrito recipe from Felu – Fit by cooking on Youtube, I gave it a try immediately. What I love the most about this recipe is that it’s super healthy, low in calories, and high in protein. What’s more, you can store this in the freezer for up to three months! Ingredients:

  • 6 wheat tortillas
  • 2 lb (900 g) 95/5 ground beef
  • 2 large yellow onion
  • 1 can (300 g) tomato sauce, sieved
  • 4 pcs. laughing cow wedges
  • 3/4 cup (120 g) shredded mozzarella cheese
  • salt, pepper, oregano, garlic powder

Directions:

Step 1

Dice two large yellow onions and set aside. Next, transfer the sieved tomato sauce to a large cup, then season with 1 tbsp salt, ground black pepper, and 2 tsp oregano. Mix everything well to combine. Heat a large pan over medium-high, spray some cooking oil, then add the ground beef. Season the meat with salt, ground black pepper, and garlic powder, and cook for about four to five minutes or until it turns brown. Once the meat is browned, add the diced onions and cook everything for another five to six minutes. Once the onions turn translucent, add the seasoned tomato sauce, and mix everything well. Cook it for another minute. (Taste test at this point.) Now, add the cheese wedges and stir them in with the beef. Cook for three minutes or until the cheese has melted and fully incorporated. Finally, add the grated mozzarella and mix everything well.

Step 2

Once cooked, transfer the meat mixture to a plate and put it in the fridge for 20 minutes before putting them in the tortillas. After cooling them, it’s time to assemble the burrito. Transfer some of the meat to the mid-lower third of a tortilla wrap, and spread it evenly, leaving a bit of space around the edges. Next, fold both sides into the center of the burrito, then pull the lower side of the burrito and roll it slowly to the other side. Wrap it tightly with aluminum foil and set aside. Repeat this until you have six burritos. Place them in a freezer ziplock bag and freeze them for up to three months.
