In just 25 minutes, you can make this crispy buffalo chicken sandwich by Brian Lagerstrom. Who can even say no to this phenomenal recipe? It’s absolutely incredible–probably one of the best sandwiches I have ever tried!
Chicken:

Assembly:
Add all dry ingredients except for the all-purpose flour to a bowl and mix them. Get separate bowls, add buttermilk in one bowl then the all-purpose flour in the other.
Pour a little bit of buttermilk into the seasoned breading mixture and whisk until well combined. The texture should be dry and powdered, but clumpy.
Coat the chicken first in the unseasoned all-purpose flour, dip the buttermilk, then in the breading mixture. Press the breading to make sure it sticks. Let it sit for about 5 to 10 minutes before frying.
Add a generous amount of oil into your large heavy-bottomed pot about 3″ in depth and place over medium heat until the temperature reaches 350F.
Gently add the chicken thighs into the oil away from you. Fry about 2 to 3 pieces at a time. Cook for about 4 to 5 minutes until golden brown. Once done frying, place chicken in a bowl and stream buffalo sauce on to coat.
Combine all ingredients except for butter in a saucepan over medium-high heat. Whisk and allow to cook for about 4 to 5 minutes until thickened slightly. Whisk in the butter.
Combine all ingredients except cheese and oil in a high-sided container, then blend with an immersion blender. Slowly stream in oil until emulsified. Add 1/2 of the blue cheese and blend until mixed. Add the other half and stir.
Add sliced dill pickles onto a toasted bun, then top it with 1 to 2 pieces of butter lettuce. Next, add the chicken and pour a generous amount of blue cheese dressing. Place the top bun and it’s ready to serve.
