This tuna-stuffed potato roll recipe by Quick Simple & Delicious will be the star on any occasion! I never thought of using canned tuna for the dishes I made before. Of course, I tried it at home, and it turned out amazing, especially the filling. There’s a burst of flavors from seasonings, vegetables, and cheese. It’s truly one of a kind!
For the filling:

Peel and shred the potatoes. Once done, squeeze and grate the potatoes. Place them in a bowl.
Add 3 large eggs, chopped parsley, garlic powder, oregano, black pepper, turmeric, paprika, all-purpose flour, and shredded mozzarella cheese. Mix all ingredients with your hands. Mix 1 teaspoon of salt so that the potatoes do not release too much liquid.
Line a 14 by 10 baking tray with parchment paper. Transfer the mixture and flatten.
Place inside the oven and bake at 356F for 20 minutes.
Make the filling. Add olive oil and diced onion to a pan. Saute until slightly soft. Add the grated garlic and saute for a minute. Next, add the chopped bell pepper. Cover and cook on medium heat for 5 minutes.
Add chopped mushrooms, parsley, salt, paprika, and black pepper. Mix until well combined. Cover with the lid and cook for 10 minutes.
Remove the baking tray from the oven and let it cool for a while.
Add the tuna to the vegetables in the pan. Mix until well incorporated.
Transfer the tuna vegetable mixture to the top of the potatoes. Sprinkle mozzarella cheese on top, then roll. Top it with more cheese and oregano on top. Bake it until the cheese is melted.
Place on a plate and slice. Serve and enjoy!
