Don’t know what to cook for breakfast? Here’s a 10-minute egg quesadilla recipe by Qiong Cooking on Youtube. If you are tired of the usual food you eat in the morning, you should definitely try this! It’s cheesy, delicious, and satisfying. What I love most about this recipe is that you can customize it however you like. You can change the shrimp to any meat you prefer, like bacon, ham, chicken, or sausage. It’s not complicated to make at all – perfect when you are in a rush. Ingredients:

  • tortilla
  • 1 teaspoon of tomato sauce
  • mozzarella cheese

For the fillings:

  • 10 pieces of shrimp (peeled and deveined)
  • 4 eggs
  • 1/4 teaspoon of salt
  • black pepper
  • 1 tablespoon of chopped parsley

Note: You can substitute the shrimp with bacon, chicken, or ham.

 

Instructions:

Step 1:

Slice the shrimp into small pieces and place them in a bowl.

Step 2:

Add 4 eggs, 1/4 teaspoon of salt, black pepper, and 1 tablespoon of chopped parsley. Beat well using a fork.

Step 3:

Place a pan over medium-low heat and add cooking oil. Pour the shrimp egg mixture in and mix until they clump together. Do not cook it for too long. Place in a bowl.

Step 4:

In the same pan, add more cooking oil, then place the tortilla. Spread 1 teaspoon of tomato sauce – fill the half with mozzarella cheese followed by the egg shrimp mixture, then more cheese.

Step 5:

Fold the tortilla in half, then press it with the spatula. Place another tortilla in the empty side of the pan and repeat the same steps. Cook them over medium-low heat until it turns brown. Flip, then cook the other side until the cheese is melted.

Step 6:

Once cooked, transfer them to a chopping board and slice them into four pieces. Serve and enjoy while warm!
