Preparing a delicious and satisfying meal for the family has always been a challenge for me, planning everything, and looking for new recipes to try. This week, my family requested something savory and spicy, and I’ve found a few recipes online that I can try to make, but one particular dish stood out. This stir-fried pork belly recipe by Aunty Mary Cooks on YouTube is super easy and quick to make and is simply flavorful and delicious that one serving surely isn’t enough.
Marinade for Pork
Seasoning Sauce
Step 1
Chop off the ends of the spring onions, then cut them in half, and then into sections. Peel the onions and chop them into chunks, then peel the ginger and slice thinly, and lastly, peel the garlic and mince well. Remove the skin of the pork, then slice them into thin pieces, transfer to a large bowl, season with salt, and mix until well combined. Sprinkle the cornstarch one tablespoon at a time, then mix well in between each addition, and set them aside.

Step 2
In a large mixing bowl, add the sugar, oyster sauce, soy sauce, dark soy sauce, and water, then stir them together until uniform and well combined, and set it aside. Place a pan on a stove over medium to high heat, then heat up some oil, and add the pork spreading them evenly. Let them cook for a few minutes or until golden brown and flip them over, then cook the other side, and keep on stirring until brown and crispy. Transfer the cooked pork to a plate, then add more oil to the pan if needed before adding the ginger, and stir fry until golden brown.
Step 3
Add the chopped onions, then stir fry until softened, push the onions aside, and add the minced garlic. Give them a good toss and cook for a few seconds, then add the chilies, toss them together, and let them fry for a few more seconds. Now, add the prepared sauce, then give them a good toss, and let them cook until the sauce has slightly reduced. Add the spring onions, then stir them all together before adding the pork, and toss them all together until well combined. Serve and enjoy!
