This easy crustless egg pie with broccoli and cauliflower is a flavorful and healthy snack you can eat any time of the day. It’s a quick, fast, and simple recipe by Clean & Delicious. Preheat the oven to 350 degrees Fahrenheit and prepare a 9-inch pie plate by greasing it with cooking spray, butter, or coconut oil. Set it aside.
Pour water into a small to medium-sized pot a couple of inches high and bring it to a boil. Place a steamer basket in the pot and add the broccoli and cauliflower florets. Steam the vegetables for 6 minutes or until they are tender.
Once the broccoli and cauliflower are cooked, transfer them to a medium bowl and season with salt, garlic powder, and black pepper. Toss the veggies to mix.
In a large bowl, combine the eggs, egg whites, and greek yogurt. Whisk until well mixed.
Add the seasoned veggies to the prepared pie plate. Sprinkle the scallions and shredded cheese on top.
Pour the egg mixture into the veggies and cheese until they are fully covered.
Cook for about 45 minutes or until the top is lightly brown.
Once done cooking, let it cool then slice. Enjoy!
