Preheat the oven to 400 degrees F.
Thoroughly wash your sweet potatoes and line a baking tray with parchment paper. Using a fork or a sharp knife, poke the potatoes 5 to 6 times, then place them on the baking tray. Bake in the preheated oven for about 60 minutes. If you are using large or small sweet potatoes, you may need to adjust the baking time.
Place a saute pan over medium heat and drizzle some oil. Add the chicken breasts and season with salt and pepper on both sides. Let it cook for about 5 minutes. Flip them over and pour the chicken broth. Cover the pan with the lid and cook for 7 to10 minutes more or until the chicken is cooked through. Once done, remove the chicken from the pan and shred using two forks or a stand mixer.
Place the shredded chicken in a bowl and mix it with the BBQ sauce.
Slice the sweet potatoes in half carefully, and fill with BBQ shredded chicken. Top each one with red onion and cilantro.
